I'll start by pointing out I am one of e-smith's reseller partners. Since this install will be used for your company in a production environment, I do hope you will consider registering your copy of e-smith and allowing a partner to assist you with your companies e-smith support and customization needs.

SCSI is fine however as you mention budget is tight, I would recommend an IDE RAID1 solution using a
www.3ware.com 6200 RAID1 controller and two IDE hard drives. Performance is excellent with the 3ware card.

Yes, whether SCSI or IDE, if the card is supported, installation is not complicated. The 3ware card is supported and tested ok.

Yes, dual processor installs are implemented by some. I would say not needed in your instance.

Not a problem, however you didn't mention above, but I would consider an antivirus solution a mandatory addition to protect your 250 webmail users!
