Your system obviously has more than one processor in it... when E-Smith is installed on a multiprocessor machine, both of these options are installed.
The E-Smith option boots the system using the SMP (Symmetrical Multi-Processing) Kernel. E-Smith UP is intended as a backup option for when the SMP kernel doesn't work for some reason. It boots the uniprocessor kernel.
