I have 3 old mail servers running sendmail. Two of the servers forward their mail to the third, that in turn sends mail out through our 'old' ISP. Mail sent from ANY server will appear CORRECTLY at its destination "from: user@expotel.com".

I now have 2 e-smith servers, one acting as an AV machine (RAV) and simply forwarding mails to and from the internet. The other is acting as an IMAP and POP3 mail server for local delivery. I have now changed 2 of the old servers to relay their mail through the new e-smith server but mail now arrives at its destination  "From: user@server-1.expotel.com". This is causing all sorts of problems as certain mail servers are rejecting the mail. Mail from the e-smith server arrives "From:user@expotel.com" which is fine.

Any idea what is wrong?

your relaying, which most isp's will bounce as it is the preferrred delivery method of hijacked accounts
