Raidmonitor and Linux/RAID for non-gurus

I've recently installed SME-Server 5.5 on a machine with 3 SCSI drives in it.  I found raidmonitor this morning and installed it, and now I've got 2 quick questions:

1) raidmonitor is going to e-mail alerts to root, but it appears that on my box remote access to root's e-mail isn't enabled (unless you consider SSH "remote access").  Is there a simple way to either enable root for pop3 e-mail access, or change a config script for raidmonitor to e-mail someone else?  I'm hesitant to edit by hand any files that SME Server depends on (hate to do something unexpected and make an assumption the developers made untrue).

2) As I've got 3 identical drives in this box anyway, you'd think there would be a way to configure raid settings such that when one drive failed it would automagically rebuild the raid set using the 3rd (currently unused) drive.  At least, that's what I would do if I were using a hardware raid card.  Is there a way to do this with Linux?

Thanks.

1) From "Other e-mail settings" in Server Manager: "Administrative notices generated by the March Networks server are normally e-mailed to the admin account. If you would like them to be e-mailed elsewhere, please enter the e-mail address below. Otherwise, leave this field blank."
