Additional SCSI hard drives

I've just installed 4.1.1 on a HP dual 300 server with Six SCSI 4.0 gig drives.      I don't have a hardware RAID controller (I have dual SCSI controllers with three drives each).  I want to be able to utilize all of my drives if possible.  Should I just partition / format / mount the drives (in fstab) and just try to fit them into the /home directory space where the ibays reside or can I use a utility to span a volume across multiple partitions and then mount it like the /home directory structure???
