Ok, to those in the know, how do I move a company's full e-mails from their current position in a Microsoft Exchange Server (urgh!), to the mail in SME?

I have a lot of experience with MS Exchange and some with SME and that's exactly why I don't think this will be easy...  

Server to server migration (without client and/or user intervention) seems te be out of the question. I did find a tool to do a server-client-server migration. Check out http://migrationtool.sourceforge.net. Haven't got any experience with it though.

So does anyone know of a way to do this? Can it really be possible that no one has done this before?

It is certainly possible using Outlook.  Create a personal folder file for the user, copy their e-mails to it.  Set up a new mail service as an IMAP service ,with the SME IP address as the server address, and copy the mail to that.  Don't know of any easier ways though.
