Topic: RAID After Installation?

Hi All,
Was scheduled to install E-Smith this weekend (tomorrow), and just learned from my hardware supplier that the second drive will be a few days delayed.

Rather than delay the installation, can I simply somehow activate RAID (software raid - not hardware based) after the installation this weekend?
Would an "upgrade existing e-smith installation" when installing overcome this?
