for incoming mail. How would you set this up?

For my email server at work, I am using a windex version of spamassassin and have a delay set up for 30 seconds. This blocks hundreds of spam emails... oh sorry... unsolicited emails a day. Spam is impatient and doesn't like to wait.

Any suggestions on setting this up on a server with nothing except AV installed?
