I want to be able to setup my own partitions amd formating on the install of SME 7. What do I need to change when I rebuild the iso?

I was able to do this with 6.x but I do not see where this can be changed in version 7.

You should just need a custom KickStart file - search the forums as this has been asked before.

Be warned - this may cause future upgrades to fail as we have no way of knowing what you've decided to do.
