Only just installed SME 7.0 have been happy with 6.0 for over an year.
A software package we use is now giving errors.
It seems qmail does not allow messages without dates.  It worked fine in SME 6.0.

What can I do to fix this ?

SME 7 has many more anti-spam features than SME 6.0.

It's qpsmtpd which rejects mail which doesn't have a Date header, not qmail.

What can I do to fix this ?

The software package should be fixed. Date headers have always been *mandatory* in SMTP.
