The tag contents (if specified) replace caller-id on the phone display.  This is useful in small offices.  Let's say you have an IVR which says something like "Press 1 for sales, Press 2 for accounts", but in both cases it goes to same extension or call-group.  If you put "sales" in tag 1 and "accounts" in tag 2 then, when the phone(s) ring, either "sales" or "accounts" will appear in the phone display, depending upon which key was pressed.  That way whoever picks up the call has some idea what the call is likely to be about.

Most of the old key-based and small exchange systems had this feature and customers often ask for it.  It was, for some reason, always known as "tagging" so we've just carried the name through.

On some cheaper phones (e.g. Grandstream101/102) the display can't handle alphabetic characters so you need to bear that in mind when using tags - in such cases you will be limited to numeric values, but the principle is the same.
