New hardware for the server...

now all I have to do is enjoy copying 50+ gigs of data over the LAN, then burn it onto DVDs.

Consider buying a second 250GB disk now.
The advantages would be:
1) No need to copy 50GB of data
2) You can then establish a RAID array- your files are valuable?  drives are cheap, good insurance
3) At the moment, you need to have drive of similar size and geometry for RAID.  OK, You probably can find a twin for your existing drive now.  What about in 12 months when you finally decide to upgrade to RAID?  May no longer be available, especially if IDE...
All the best. chris.

Just gonna quote myself here:

Problem is, I dont have 2 large harddrives. And I dont want to spend money on this project either... (Hence the server made entirely of scavenged hardware)

Maybe Ill dig up the cash for another 250 gig drive before I get the time to do the actual migration - as you say, there ARE many advantages. But I do enjoy the fact that my server has cost me ZERO bucks, other than the power uses. I have a huge pile of PC2100 ram lying around... maybe someone will be interested in a trade for a 250 gig harddrive...

Just for laughs and giggles, here she is:

2,4GHz celeron, 1 gb ram, 40 + 250gb harddrives, running surprisingly well. Will be changed to an IBM Netvista 8305-21G desktop pc (2.0 GHz P4)

Someone WAS interested in trading!

As we speak I am installing SME server on the "new" hardware. An IBM deskop PC, sporting a 2.0 GHz P4, 1 gb of ram, and two 200 gig harddrives. And the best part: A scsi tapedrive! Looking forward to doing nightly backups...
