Using SME7.2

All email seems to work fine except for the following:-

There is an external email address user@bigpond.com that is set to forward mail to user-bigpond@smedomain.com however all email forwarded from user@bigpond.com ends up in admin@smedomain.com.

'Mail to Unkown' is set to catchall@smedomain.com but is going to admin@smedomain.com instead.  

Is there a way to accept forwarded mail for this user into a specified account?

hyphen is a special character in a SME email address.

anything-followup@smedomain.org will deliver to the user or pseudonym named "anything".

So, user-bigpond@smedomain.com will be looking for a user or pseudonym named "user".

If you forward your bigpond email to catchall-bigpond@smedomain.com it should be delivered to the 'catchall' mailbox.
