I was hoping someone might be able to tell me if I was to follow the http://wiki.contribs.org/PHP guide on upgrading to php5. How would I go about reinstalling things back to default when it became time to update sme again, or if 'all hell broke lose'

I was hoping someone might be able to tell me if I was to follow the http://wiki.contribs.org/PHP guide on upgrading to php5. How would I go about reinstalling things back to default when it became time to update sme again, or if 'all hell broke lose'

The howto does not upgrade stuff, AFAIK, it will only install additional RPMs, so uninstalling the RPMs installed using this howto should return your system back to normal, no warranties, as I did never try this myself.
