How to set up second mail server on the network

I've done some searching, but maybe I'm looking in the wrong place. Here's the situation...

I'm trying to move mail from an old server to a new SME Server box. I tried setting the SME Server up in server only mode, then put it on the network with the old server. Under those circumstances, I can access the IMAP server on the original server-gateway machine. However, with things set that way, I cannot access the IMAP server on the SME server. Which makes sense - there is nothing set to tell the network where it is.

I have little access to the old server, so I hope to bring the SME machine back up in server-gateway mode, connect the old server as an internal server. What I then need to do is tell the SME server where to find the old IMAP server so I can copy the mail over. Trouble is, so far I've not managed to find where the 'mail.mydomain.com' alias is defined. I assume that I could add another alias (oldmail.mydomain.com) and point it at the IP for the old mail server.

Is this possible? And if so, where do I make the entry and what form should it take?

Sorry if this is a basic question - I'm still getting accustomed to the way SME works.

Not sure whether that's enough...

 :) Thanks. Its a start at least. I'll have a look at it and see if it will do enough, but it looks promising.
