I am using Ahsay backup software on my SME 7,3 and it works greate on Ibays.

However
1. Where are emails located?
2. How do I make a MySQL dump to an Ibay?
3. Do I need other things in order to make an "full" SME backup?

I suggest you start reading http://wiki.contribs.org/Backup_server_config it should give you some pointers. Also have a look at the pre/post-backup and pre/post-restore events. This should at least solve you MySQL issue(s).
