I'm pretty sure that this is well covered in the manual. At any rate...
Your e-smith server needs two NICs if it is the gateway between your LAN and the Internet (via a router or cable modem, for instance).
If your e-smith server is not the gateway to the internet, then it is operating in serveronly mode, anddoes not have an internal and external IP address, so there is no need to have a second NIC. However, in serveronly mode, many of the features of the e-smith server/gateway are not active. The choice is yours.
