As far as I know, no e-smith server has ever been compromised. E-smith 3.0 and earlier was subject to unauthorised email relaying, but that is obviously quite a different thing.

There is no short answer to that question. I'd suggest that you check out a book on Linux security if you are really concerned.

The e-smith server currently does not log connection requests to ports which are not active. But there is no particular reason to be concerned about them anyway, IMO. Connections to ports which are active are logged in /var/log/secure. You may see some "connection rejected" messages in there. This is not unusual, port scanning is pretty much ubiquitous these days.
