This isn't really an e-smith question per se, but a Linux system administration question. The e-smith server and gateway is currently a single disk only system, but if you have sufficient linux knowledge, you may customise it as you wish - and we have documentation to help you at

To replace your current disk with a larger disk, you should read
http://www.linuxdoc.org/HOWTO/mini/Hard-Disk-Upgrade.html, or, if you have sufficient space on one of your client machines, you could backup your e-smith system using the standard GUI, replace the hard drive in your server, perform a fresh install of e-smith 4.0 on the new system, then use the restore function to restore your e-smith system configuration, user accounts and ibays and user files.
If you wish to customise your system to have more than one hard drive, then you should find the information you need on the web - start with the Linux System Administrators Guide -

The standard e-smith server and gateway may one day include a feature to make use of a second drive - but that feature is nowhere near the top of the current TODO list.
