do I need to build a custom kernel to have my e-smith box support smp or
is there some switch in the e-smith setup..?

Please post questions only to the most relevant forum.
e-smith will detect an SMP capable motherboard and install the SMP
kernel if your hardware is supported by RedHat.
Please note that 4.1beta3 did not install the SMP kernel, but 4.1beta4 does:
