Title: Can you set up several NIC's?

I wonder if you can set up several Network cards on a e-smith server and use them for clients, ie a software router/hub??

Yes, but you will need to do it manually. The server-gateway mode uses
two NICs (if you use external Ethernet connectivity) and you would need
to add custom template fragments to add masquerading, etc. for any
other interfaces.
