Title: Copying mailboxes

I am replacing my e-smith server with a new one and want to do a clean install. I don't want to lose my mailbox contents. What is the best way to back up those files so I can use them on the new server?

Backup and restore.

I just want the mailboxes and nothing else. Backup and restores is not selective on just that.

Well, the mailboxes are stored in ~user/Maildir, but be prepared to deal with lots of permission and ownership issues if you don't back up (and restore) the user database as well.
