is there a way to set up an email account to auto-respond to all messages it recieves?

Do you mean like the *nix "vacation" program? I don't know about configuring E-Smith to do it (not sure if qmail can be configured to do that) but I have my MUA on a separate linux box that replies to all senders with a out-town-message for me.
This is done with rules.
