Title: email relay for unknown users?

Is there a handy way to make SMEserver accept all mail for a domain, deliver anything that matches local user names locally, and forward the rest to a specified server?   I'd like to move a set of users to a new server over a period of time and have their mail accepted when their account is created but go to the old host until then.
