I want to close all the ports because customer from this I'cafe make problems from here!!! Web and ftp will work Via Squid.... But I don't now how I make with IRC because this not working via Squid.  Any ideea?

it will work with http tuneling,
or just open irc ports (simplest way).

PS : about tuneling you can try httport :
HTTPort establishes a transparent TCP/IP tunnel through a proxy server. This allows your software to use any of the Internet services based on TCP/IP while being under proxy and blocks your local network administrator from logging your activity.
