Is there a list of components anywhere that have been reasonably reviewed to establish that they are suitable or are NOT suitable for running e-smith?

You mean hardware, right?  There's a pretty good hardware list in the user's guide, particularly as regards NICs and SCSI controllers.  Everything else should be pretty generic.
