Here's a couple of ideas:
Migration utility for NT & Netware
Multiple hard disk support
More control over running services from web-console e.g qmail, samba, cron jobs etc
Will post more as I think of them

Well what if you want to change from MS-Exchange or Groupwise - how would you import all the users account??? and messages??? Manually??? How would implement a 500 user system?? Is there a quick rollout method?
E-smith is a replacement for and NT or Novell server - both as a mail/gateway & file server. What about user shares, logon scripts stuff like that??
We plan to implement E-smith as a full replacement on both these system - both to new network clients & upgrades from existing network O/S's.
Other utilities to maybe look at are:
A cron job manager from the console
Active updates from the internet (like MS critical updates)
Maybe a more future plan could be a E-smith version for coporates - 500 to 10000 users??

I came across a nice web-based cron manager a few weeks ago. Unfortunately, I wasn't in need of one so I didn't record any info about it :-( If I come across it again I'll post some info up about it.

If you do 250 users per e-smith, all you'd need is 40 boxes to do 10,000 users (^_^)
Personally, I wouldn't want 10K users on one box, so what you'd really need is some form of directory services to manage everything from a central location.
