I could be wrong, but I don't think it's possible to set up a single group email account for a domain so that I can then pop3 to the SME server once to download all email for everyone in the domain?

What you need to do, is create your user accounts on the server, and then use the advance e-mail features to retrieve all the e-mail using the main account your ISP gives you. It's all in the manual, and it's very simple to implement, nothing extra to install.

I can confirm that this is what I do. In the e-mail settings of server manager, select e-mail retrieval mode to Multidrop. In the ETRP - Multidrop section, filling the details for your POP account.
When picking up e-mail from the POP account, this will look at the user name (the bit before the @) and compare it to a local account. If it matches, then the mail is forwarded there (or at least that's how I think it works, it's certainly what it seems to do).

Yes. And that is also how Multi-Drop systems fall down.
Eg. Most mailing lists send out their mails using Blind Sends or BCCs which do not show up on the To: line used to sort Multi-Drop mails. These mails don't get delivered to the intended receipients.
