Can anyone tell me if the "Backup to Workstation" option can be customised or utilised to work with Mac OS X ... or point me to a post if I've missed it in my searches ...

what is not working with this option? As far i remember it only creates a tar zipped file that is saved in your lokal machine. And _should_ work with any computer if there is space left on it.
A rsync´ed backup through ssh is not possible because OS X has a wrong charset in its terminal emulation. And a wrong/different keymap underits GUI and terminal windows. But at all it is a very nice OS. :)

You need to have your Windows sharing a.k.a. SMB settings correctly setup on OS X.
In response to another recent request (http://www.bmannconsulting.com/node/view/713#1431), I will be posting a HOW-TO about this in the near future.
