Hi,
Is it possible to get root access to an e-smith server, either at the terminal or over SSH or any other method ?

Sure, and I'm sure at least some of this is in the manual. At the console, just press Alt-F2 (or F3, or F4, etc.) and you'll get a login prompt. Login as root with the admin password. To do it remotely, RTFM or just play around with the e-smith manager a bit.

www.e-smith.org has some user-contributed how-to docs on just about everything, including enabling SSH'ing into the server. (telnet is disabled by default i think)
SSH into the server using a user name, then type 'su' at the prompt to go super-user.
