I have a 5.5 SME Server running in server only mode that wont boot - it hangs after it has change the root to read-write mode.
How can I get the stuff out from the server?
Can I upgrade it to 6.0?
I hope someone can help me since I haven't got a back-up (Real men don't back-up until it's to late).

You could build a Redhat system and mount the disk as a Slave or secondary IDE disk. Then pull the data from it

As long as the server was shutdown cleanly, you should be able to upgrade it.
If it wasn't shutdown cleanly, you will need to somehow run fsck on the disk or the upgrade won't proceed. There are several linux recovery tools that you can download and burn an ISO boot disk with that will automatically mount your filesystems.
I've used the following on one of my servers, though I still had to reload it from scratch in the end....
