The iso for SME Server 5.5 had documentation included so when you had burnt the CD you could pop it into a windows box and read how to install etc. This is incredibly useful. In fact, possibly essential!

Hardly 'essential'. But as for the rest you are absolutely right.
It must have been forgotten along the lines of Mitel making the documentation for 5.6 available on their website instead, and never since remembered.
As an explanation it might be said that the editors of contribs are busy people, but its a splendid observation you've made nonetheless !

well, as a matter of fact, it has not been 'forgotten' but simply not finished. The documentation on the Mitel site is copyrighted material.
We are in the process of adjusting the latest GPL documentation to match the current version.
A preview of the manual has been available in the documentation section.
It will be done when it's done ;-)
