I'm running e-smith at home and would like to use it at work but I need a DMZ for our many mail servers and WEB servers. Can I put in a 3rd NIC and tunnel the real IP to a NAT'd IP by port on a third NIC.

I'm sure that it can be done if you try hard enough. But I think you will have to work out how on your own. Have a look at the documentation on http://www.e-smith.org/ to see how it all fits together.
