all mail has been deleted from sme via pop3 . any ideas on how to use logs to see text of deleted mail

The text isn't stored in any log file - why would it be? That's what the mail directories are for...

Correct - mail deleted from the server is gone for good (or bad, in your case).

how does your SME collect the emails?
does it fetch them by pop or is it a "real" mailserver?
for pop: go to the mailserver of your provider and mark all mails unread, so SME will fetch them again.
in the other case you have bad luck.
