I am playing with SME and continually installing reinstalling whilst I learn.
Is there a way you can write a script to run on a new install that will automatically put in users, ibays and any other setting or should I just install and then backup to desktop and load again from the desktop.

or
create reinstallation disk from server manager on an already configured server
and as you say
a backup/restore to/from desktop will also work (make sure the resultant backup file is less than 2Gb though).
