I am setting up a home server and decided to give SME a try since I can't afford Microsoft Server products. This is fine with me because I think Microsoft licensing sucks anyway. I have teenagers and would like to be able to keep track of the websites they visit and when. Is this possible? If so, what software do I need? I am brand new to linux, but am definitely willing to learn.

YES you can track whatever has been accessed IF you server is in Server-gateway mode.
This is done by SARG (Squid Analyse Report Generator).
I think it´s included... if isn´t should be simple to install.

...and even better you can control what sites they access, and block access to them, using Dansguardian.
