Title: What DNS servers are being used by my SME?

I'm trying to determine what DNS servers my SME is using for name resolution on the internet.

Whenever I do a dig, it always reports the server as the local machine.

because that IS your dns server.  The server is running tinydns and dnscache, basically making it a caching dns server.
