Title: custom template explanation?

I'm not a brand-new user to SME, but I'm trying to expand my knowledge and use.  In 'standard' Linux systems you can do a lot of tweaking by editing the different configuration scripts in /etc/ but SME has all sorts of warnings about not changing those files, instead use the templates-custom directory.

Is there a How-To or other sort of document that exlains this process step-by-step, or at least something that gives an overview of how the templates work and how to use them?

My SME box is running with no keyboard, no monitor, nothing, and sometimes I'd like to make a change that can't be done through the web interface, (i.e. via telnet, or winscp, or something like that).
