Why does it say this in my blades panel in Server Manager?
SMEServer v5.0 Update 3 SMEServer-5.0_Update3 unsupported
Is it safe to install? I am at update level 2.

I have made several unsuccessful attempts (on separate pc's) to install Update3 after successfully installing Update2 and get the message "You have not agreed to all the required licences". I marked all 13 as "yes".

I had that too, but was using Lynx...
when I retried with IE 5.5, I had no problems

Update 3 is a fully supported update blade (assuming, of course, that you have a support contract!) produced by Mitel. I'll make sure the support status is correct on the blades panel momentarily.

In general, blades are currently uninstallable via lynx. That's this known bug:

The install should work in your favorite GUI-based browser.

problems like this to us directly, at bugs@e-smith.org; we can't
fix it if we don't hear about it, and bug reports will get our
attention before board posts.
