I work for a company which wants me to use a Mac for a backup volume location. I can get from the Mac to the SME 7 server and have persistent remote volumes. I cannot get from the server to the Mac. How does one go about setting up a persistent volume on a Mac accessible from the server?

You should be able to set up an SMB share from the Mac. From memory, there is an SMB service you need to turn on first in the network settings, then you can add the shares.

SME includes netatalk which is appletalk, I have had no issues connecting a Mac up to version OS X 10.3 not using SMB.
