Just installed SME server and have added a Kyocera FS-1010 as its only printer. The FS-1010 was previously connected to my desktop PC running Linux via CUPS.
How can I point the Linux box to the printer on SME server?

Have you configurate it on Printers panel of server manager ?
If yes, it should be acessible using SMB and \\servername\printername as target.
OR
You also could try to install CUPS on SME: http://wiki.contribs.org/Cups

Edit: Searching here http://www.openprinting.org/show_printer.cgi?recnum=Kyocera-FS-1010 you´ll see your printer works perfectly on CUPS.

Did you read this: http://wiki.contribs.org/SME_Server:Documentation:Administration_Manual:Chapter13#Printers ? Also take notice of the text just below the note box:
"Note also that the server printing system does not perform any filtering and passes the print requests directly from the client computers to the printer in the "raw" or "pass-through" machines. For this reason, the SME Server does not have a list of "supported printers". Most printers are supported as long as the appropriate driver is installed in the operating system on your client computers."
