Hi,
When I initially setup my SME server a couple of years ago, I went with an IMAP mail format. I've since decided that a POP format is more appropriate for our environment. Is there a way to just simply convert my SME mail server from IMAP to POP, make the appropriate changes in my workstation's mail readers and have them download each user's stored mail for the last couple of years to each individual workstation?

you don't have to convert anything on your server.. it's infact a client side configuration..
change your email client access mode

SME is both an IMAP and POP mail server. There is nothing to change on the server, just the clients.

There is one consideration I just remembered before you do this.
POP only fetches the main "inbox" folder. If a user has multiple folders on the server, you will have to create those on the POP account and copy the contents of each additional folder from the IPAM account to the POP account.

Or you could first have users synchronise all mail so they have an offline copy before switching to pop. I am still not sure if POP really is the way to go, why are you switching to POP, because users do not have their mail available offline?
