would e-smith 5.1 run on a pentium 133 with 48 edo ram and 2 gig hard drive

It's Red Hat Linux underneath! So of course that setup will do. But if you are planning on doing heavy file, web or e-mail activity I would at least up the memory to 64Megs and you won't be able to have many files served on 2Gigs of hard drive space.

Sure it will, but whether it's comfortable depends on what you want it to do.  
I've got a 486DXII/100, 50something MB, 2GB SCSI drive. The 5.1.2 is server and gateway and is running IMP3.
Certainly good enough for the home network with two users, but I wouldn't recommend it for anything heavier.

The manual says category one server (light, up to ten users) requires Pentium 90, 32 MB, 1GB. This is all less than your configuration. Please do read the manual.
