How to install KDE or GNOME ?
SME Server is a server and should not be running any graphical shell (this is for desktops) as it will increase security risks. Why would you need this?

I just want to test, improve my knowledge, fun,...

so install any virtualization sw on your pc/laptop (or, if you prefer, on your SME) and then play with a virtual machine.. I suggest you Centos (you'll find yourself at home with yum/rpm) and Ubuntu
