Finally decided I needed my own server. Love the SME Server with its easy to use GUI. Even a newbie like me can appreciate it!
Now that I have the initial settings as desired, my website running and a MySQL database initially built, I'd like to backup everything before I start to mess with it.
How can I backup all the contents of the server to the built-in CDROM. I'd like the CDROM to not just include the data but also to re-configure the entire machine in the event of a disaster.

My advice is that you purchase a USB key of sufficient size and backup to that. SME server has no support for backing up to CDROM, and CDROMs are small compared to USB keys and disks in any case.

You may be wanting a "bare metal" backup. There are various ways to achieve this, but the cloning software used must support Linux partitions & LVM.
Otherwise use any of the recommended backup methods as they all backup data and configuration settings, but none of them backup the installed contribs (ie system files & so on), although applications installed in ibays will be backed up and restored.
