After a reboot, SME Server is taking forever to boot back up. It sits at the boot screen saying "Checking root filesystem" for hours and hours. It's only running two 320gb drives in RAID.
Is there a way to skip/speed this up? If the server goes down I can't wait all day to get it back up...

You haven't given enough information, but SME hasn't really started, at this stage you are still checking your disks, so either the disks a slow, have errors or the disk controller is having trouble.

What other information do you need?

Most likely cause of this is BIOS configuration with disk controller configured in sub-optimal configuration. Google for your hardware + linux + slow disk, and/or post full details about your hardware here.
