I think this a question you should post into dansguardian forums or coovachilli one.. it's not SME related..

if you find how to do it, come back here and we'll try to adapt to SME

Yes, it's possible to see trafic on coova-chilli network with Sarg, if chilli is configured to redirect web trafic to squid:
