Title: Change hard drives in server

Searched through the forum and found some threads on this subject but didn't find the answer I was looking for.
What I want to do is get 2 new 1TB hard drives for my server. I'm running out of space.
What is the easiest method to use to image the server to new hard drives?
I am backing up the server but that is just to restore individual files not doing an image.
