Title: System log

Using SAIL 3.1.1-22 and want to go through the system logs to check for hacking attempts.

When I go to System -> Syslogs and try and open /var/log/asterisk/messages nothing seems to be happening. Not sure how long it should take to load but I've been waiting 5 minutes now.

If I connect via CLI and go to the directory /var/log/asterisk/ I can't see any items with the name "messages" Should I be able to pull back a file and check on my local system?

It should be there.  I've no idea why it would be missing on your system. Check /etc/asterisk/logger.conf and ensure that logging is enabled.  If it is then restart asterisk and see if it begins logging.  Also, check the syslog (/var/log/messages) when asterisk starts to see if it generates any system errors.
