Where and how I can put some external IP as trusted IP on my firewall. I'd like to allow one IP to use my computers without any limitations and without blocking IT in any case.

You can add this IP as aaa.bbb.ccc.ddd with mask 255.255.255.255 to "local networks" via server-manager. Please not that if you want to use shares via Samba, or assess internal computers you still have to use PPTP-vpn from remote computer to server since samba is not bound to external interface.
